The Fish Deli Fillet of Cod with Cheese Sauce and Spinach
Ingredients
Cod fillets
Milk
Juice of one lemon
50g butter
50g plain flour
100g cheddar cheese, grated
Spinach
Fresh or dried tarragon
Method
1. Lay the fillets into a shallow tray and just cover with milk. Season with a little black pepper and lemon juice. Cover with foil and poach in a medium hot pre-heated oven for 20 minutes.
2. Make the white sauce: Melt the butter in a thick bottomed saucepan and add the flour. Mix together over a gentle heat to form a paste (roux).
3. Gradually add your hot cooking stock from your poached fish until a sauce consistency is reached. Gently cook for 10 minutes or so.
4. Add some tarragon and grated cheese to taste.
5. Cook the spinach and lay onto the bottom of an earthenware dish.
6. Place fish on top of the spinach.
7. Ladle over the sauce and sprinkle with the remainder of the cheddar cheese. Bake in a hot oven for 20 minutes.
8. Serve with mashed potatoes.
